As described on the site garanteprivacy.it:
Cookies are little text files that sites, when visited by the users, send to their terminals, in order to be stored and used for the next visit. Cookies are stored by a site which is different from the one the user in surfing.
This is because on a site might be present elements (images, maps, specific sounds, links to other pages and dominions etc.) that are stored on different servers.

The warrant divides cookies by technical purposes and use and by their origin of “first” or “third” part.
Technical cookies: these are cookies that allow surfing or provide a service requested by the user. They don’t have any extra purposes and are usually installed by the owner of the web site. Without such cookies, some operations might not be possible.
Profilation cookies are used to track the surfing activity of the user and create profiles on his tastes, habits, choices etc. Through these cookies, ads, according to the user’s tastes, might be send.

First part cookies: cookies inserted by the site the user is visiting.
Third part cookies: cookies inserted by external sites.

Very often the user visits a page whose contents are stored on other sites, these sites might add cookies.
